STEP 1.Heat oil in a thick bottom pan do tempering of jira, sesame seeds,green chillies - ginger paste. Now add the crushed fresh pigeon peas (Lilva Tuvar) , crushed green pea fresh and crushed green peas. Add Soda by carb & salt. Mix well. Cook it covered on low flame for 8-10 minutes or till the all peas are cooked.
STEP 2.🔸Mix the mixture well. Add suger , lemon juice, chopped coriander and fresh green garlic paste
STEP 3.🔸Mix them well. Cook for 3-4 minutes till everything is well combined. The stuffing mixture is ready. Divide the mixture into 8 - 10 equal portions
STEP 4.🔸Combine the Purple yam, roosted Chickpea flour & salt in a bowl. Divide the mixture into 8 -10 equal portions
STEP 5.🔸Dust your hands lightly with cornstarch. Spread a spoonful of the Purple yam dough mix in the palm of your hand. Make an indentation in the middle and stuff it with the green mixture. Cover the filling with more Purple yam dough Shape into a roll.. Repeat until mix is used up.
STEP 6.🔸Make slurry by mixing corn flour, Plain flour , salt and water and set aside
STEP 7.🔸Dip each roll in slurry then roll in the crushed papad till they are evenly coated from all the sides.
STEP 8.🔸Heat oil in a deep non-stick kadhai / pan and deep fry a few rolls at a time on a low flame till they are golden brown in colour from all the sides. Drain on absorbent paper.
STEP 9.🔸Serve hot with ketchup or chutney.
