  • STEP 1.Preheat the oven to 180°C (350°F).
  • STEP 2.In a bowl, combine the breadcrumbs, garlic, herbs, spices, and olive oil.
  • STEP 3.Butterfly the lamb shoulder by cutting along the bone and opening it up like a book.
  • STEP 4.Spread the breadcrumb mixture evenly over the inside of the lamb shoulder.
  • STEP 5.Roll up the lamb shoulder and tie it securely with kitchen twine.
