I travel every year to Peru on a medical mission trip and was introduced to quinoa there. For years I made a similar chicken dish with rice, so I tried it with quinoa. We love it. Joyce Moynihan, Lakeville, Minnesota.
Ingredients for Stuffed Chicken Breasts with Cranberry Quinoa Recipe
2 cup Chicken Broth
1 cup Quinoa, rinsed
1 sprig Fresh thyme
1 tablespoon Olive oil
8 Green onions, chopped
1 Celery rib, chopped
0.67 cup Dried cranberries
0.67 cup Chopped dried apricots
3 tablespoon Lemon juice
2.50 teaspoon Grated lemon zest
1/2 teaspoon Salt
As required Chicken
3/4 cup Dry sherry
1/4 cup Water
3 tablespoon Red wine vinegar
1 tablespoon Brown sugar
2 teaspoon Cornstarch
1/4 teaspoon Ground ginger
1 Large tart apple, peeled and chopped
1/2 cup Dried cranberries
0.33 cup Chopped walnuts
1/2 cup Apricot Preserves
2 tablespoon Butter
