Ingredients for STRAWBERRY JAMMY COOKIES Recipe

  • As Required For the cookies
  • 18.75 g Cold butter, cut into small pieces
  • 12.50 g Sugar
  • 5 g Almond flour
  • 37.50 g Flour
  • As Required others
  • 1/4 Tsp Orange zested
  • 1/2 Tbsp Milk
  • 0.13 Tsp Vanilla extract
  • 25 As Required For the strawberry jam
  • 3/4 Tbsp Sugar
  • As Required Lime juice
  • 25 g Strawberry chopped

Directions: Strawberry Jammy Cookies Recipe

  • STEP 1.1. To begin with, blend together butter, sugar and flours to a sandy, grainy texture.
  • STEP 2.2. To this, add the orange zest and vanilla essence.
  • STEP 3.3. Now, add in 1-2 tbsp of milk just the bind the dough.
  • STEP 4.4. Blitz the mixture for 1-2 pulses and transfer to a mixing bowl.
  • STEP 5.5. Combine the dough together and once it comes together, place it on a parchment paper, flatten it and place another paper on top.
  • STEP 6.6. Roll the dough to a thickness of 0.5mm or 1/2 cm. Be very gentle through the process and ensure that the thickness is even.
  • STEP 7.7. Now, place it onto a tray and refrigerate the dough for 30 minutes.
  • STEP 8.8. Meanwhile, for the strawberry jam, wash and chop the strawberries.
  • STEP 9.9. Blend them coarsely.
  • STEP 10.10. Add in the sugar to this and microwave for 2-3 minutes in bursts of 1 minute. (You can also cook this on the gas on a low flame.)
  • STEP 11.11. The colour of the jam will change and it will get deeper. Add in the lime juice at this stage and mix it.
  • STEP 12.12. Set aside and allow to cool to room temperature.
  • STEP 13.13. Meanwhile, remove the dough and make the cookies using the cookie cutters. I have used round ones for the base and heart shaped ones for the window.
  • STEP 14.14. Transfer the cookies onto a tray, lined with parchment paper and bake for 15-18 minutes at 180 degrees C in a preheated oven.
  • STEP 15.15. Once the edges start to brown, remove and cool on a wire rack.
  • STEP 16.16. Once cooled, sprinkle some powdered sugar on top.
  • STEP 17.17. Finally, spread some strawberry jam onto the round ones and sandwich them with the heart cut out ones.
  • STEP 18.18. Serve immediately and enjoyyy!!!

  • STEP 20.Whenever zesting citrus peels, make sure to just grate thrice at one spot. Grating more will add the bitter white peel too.
  • STEP 21.While making a cookie dough, be gentle and just combine the ingredients well. Over-kneading will develop Gluten which causes the cookies to become tough.
  • STEP 22.While baking cookies or biscuits, always line your tray with parchment paper (Not butter paper). It controls the baking temperature and also gives a perfect golden brown colour to your baked goods.
  • STEP 23.While making cookies, freezing the cookie dough for 30 minutes prior to baking limits their spread by solidifying the fat. It also improves the texture of your final product.
  • STEP 24.Always add lime or lemon juice towards end, once you finish cooking. This prevents the loss of vitamin C present in limes and lemons & Prevents it from getting bitter.
