STEP 1.Clean and wash the squid. Carefully peel off the skin layer.

STEP 2.Cut it open and place it flat. The inside part should face upwards. Scor it with a knife to make a pattern of criss cross diagonal strips. Do not cut through the flesh completely when making the pattern.

STEP 3.Then cut the squid into small pieces.

STEP 5.-1)fill a pot with water and add 4 to 5 slices of ginger. Cover and bring the water to a boil.

STEP 6.-2)add 12 oz squid to the boiling water and stir them. Blanch for 10 seconds to remove any bad smell.

STEP 7.-3)then remove it from the boiling water and hold it under cold running water.

STEP 9.-5)to make the sauce in a bowl add 1 tbsp cornstarch, 1 tbsp chinese cooking wine, 1 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp water ,1 tsp sugar, 1 tsp sugar, 1 tsp black pepper, 1 tsp dark soy sauce and mix well.

STEP 10.-6)place a wok on high heat and add 2 tbsp oil. Wait for the oil to heat .

STEP 11.-7)add 1 tsp ginger strips, 3 cloves of minced garlic, 1 tbsp white part of the spring onion diced and stir fry till fragrant.

STEP 12.-8)add ½ red bell pepper and ½ green pepper cut into chunks .stir fry for 3 minutes or till bell pepper are cooked as desired.

STEP 13.-9)then push the pepper to one side of the wok and add blanched squid.

STEP 14.-10)turn the heat to the highest level and stir fry the squid and vegetables.

STEP 15.-11)do not cook the squid for more than 1 minute 50 seconds.

STEP 16.-12)when there are 20 seconds left, add the prepared sauce. Toss all the ingredients together to combine well with the sauce. Turn off the heat.

STEP 17.-13)take the stir fry out of the wok and serve.
