  • 300 gram Chicken Breast
  • 1 No.s Zest and Juice Lime
  • 1 tablespoon Peanut oil
  • 100 milliliter Coconut milk
  • 1 teaspoon Thai fish sauce
  • 1 No.s Green Bell Pepper Thinly Sliced
  • 1 bunch Coriander chopped
  • 2 No.s Spring onions chopped

Directions: Stir-fry Lime And Coconut Chicken Recipe

step 1

  • STEP 1.1 in a large mixing bowl add 300 gm chicken breast cut lengthwise into two layers and then cut into thin strips across the breath, add zest and juice of 1 lime and mix well with the chicken pieces.

step 2

  • STEP 2.2 in a wok heat 1 tbsp peanut oil on high heat. When hot add the chicken and stir fry for 4 to 5 minutes till the chicken changes colour.

  • STEP 3.3 then add 100 ml coconut milk, 1 tsp thai fish sauce, 1 thinly sliced green bell pepper, half of a small bunch of chopped coriander and the white part of 2 spring onions chopped.

step 4

  • STEP 1.4 mix together well and stir fry for 2 to 3 minutes. and 5 add salt to taste and stir.

step 5

  • STEP 4.5 add salt to taste and stir.

step 6

  • STEP 5.6 lastly add the remaining chopped coriander leaves and the green part of 2 spring onions chopped. Stir together well. Turn off the heat.

step 7

  • STEP 6.7 transfer to a dish and serve hot with white rice.
