Directions: Split Pea, Bacon & Potato Soup Recipe

Cooking Directions

  • STEP 1.In a large pot, cook the bacon until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
  • STEP 2.Add the onions, carrots, and celery to the pot and cook until softened.
  • STEP 3.Add the split peas, potatoes, chicken broth, and water to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until the peas and potatoes are tender.
  • STEP 4.Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, blend in batches and be careful as the soup will be hot.
  • STEP 5.Return the soup to the pot and stir in the cooked bacon. Season with salt and pepper to taste.
  • STEP 6.Serve the soup hot, garnished with additional crispy bacon and fresh parsley, if desired.

Cooking Tips

  • Soaking the split peas overnight can help reduce the cooking time.
  • For a vegetarian version, omit the bacon and use vegetable broth instead of chicken broth.
  • If the soup is too thick, you can add more water or broth to thin it out.

Storage and Serving

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat the soup on the stovetop over low heat, stirring occasionally.
  • Serve the soup with crusty bread or a side salad for a complete meal.
