Ingredients for SPINACH RICOTTA SUNFLOWER BREAD Recipe

  • 0.40 cups maida / all purpose flour / refined flour / plain flour2 cups maida / all purpose flour / refined flour / plain flour
  • 0.40 tsp Dried active yeast
  • 0.30 As Required Sugar
  • 1/5 tsp Salt
  • 1/5 tsp Minced garlic
  • 15 As Required 100ml lukewarm milk
  • 15 As Required 75 ml lukewarm water
  • 0.40 tbsp extra virgin olive oil plus extra for greasing bowl
  • 1/5 A Bunch spinach washed & boiled with a little salt
  • 1/5 tbsp Minced garlic
  • 1/10 cup mozzarella cheese (grated)
  • 0.40 tbsp Ricotta cheese or thick cream
  • to taste Salt & pepper
  • 1/5 tsp Oregano and chilli flakes
  • 0.40 Tbsp melted butter & oregano for the top

Directions: Spinach Ricotta Sunflower Bread Recipe

  • STEP 1.To make the dough:
  • STEP 2.-Activate yeast first: Add lukewarm milk & water in a mixing bowl, dissolve sugar & then yeast. Stir till it dissolves & keep covered in a warm place for 10 minutes or till it froths up well.
  • STEP 3.-Combine the flour & salt in a large bowl. Add minced garlic & olive oil. Add activated yeast to flour mixture & mix until  dough comes together. The dough should be slightly sticky. Add more water if required.
  • STEP 4.-Knead on kitchen surface using stretching movement of hand till a soft pliable dough is formed, 8-10 minutes.
  • STEP 5.-Grease a bowl with olive oil & turn the dough over so it is coated with the oil. Cover & let it rise for 1.5 hr or until it doubles in size.
  • STEP 6.-Make the filling:: squeeze out the excess water from boiled spinach well. Chop finely. Add it to a bowl along with other ingredients. Mix well.
  • STEP 7.-Shaping the flower:: Turn out onto a floured surface, punch out air.
  • STEP 8.Divide into 2 balls. Roll each out with a rolling pin & press using a plate of approx 9” dia as template. Trim using knife or pizza cutter to get a perfect circle. Transfer to a baking sheet.
  • STEP 9.-Place 2-3 tbsp of the filling  in the centre & also along the edge leaving 1 cm like a doughnut shape.
  • STEP 10.-Place the other circle & using little water to seal, lightly pinch the edges together with your fingers.
  • STEP 11.-Place a glass over the central stuffing. Using a sharp knife first make cuts at 12 ,3 ,6 & 9  o’clock positions, then further each quarter into 3 & then each slice once more (1” wide ).
  • STEP 12.-Turn each 90• so that the filling faces upwards and the bread looks like a sunflower.
  • STEP 13.-Cover and keep for another 30 mins in s warm place.
  • STEP 14.-Meanwhile preheat the oven to 180 C/ 350F. After 30 mins brush the bread with melted butter and sprinkle the centre with oregano and black pepper.
  • STEP 15.-Bake in the oven for 25-30 mins till top is nice golden brown. Do ot overdo it. May brush some more butter for a nice glaze. -Rest for 5 mins & your sunflower pull apart bread is ready to serve!!
