Spinach is not a common ingredient in south indian curries. However recently it has been imported from outside and is being used as a main ingredient in some curries. Paneer has been part of north indian cooking for ages. It is made from curdling milk, now it is available with the widespread use of refrigeration in grocery stores in india. The two blend very well in curry and can be served flat bread or rice.
