STEP 1.1 cut the cucumber into 5 cm long and 1 cm thick segments.

STEP 2.2 place them in a mixing bowl and add 15 to 20 gm salt and mix well.

STEP 3.3 weigh the cucumber down with something heavy. For example, place a small plate on the pieces of cucumber in the bowl and weigh it down with a heavy bowl of water.

STEP 4.4 keep it aside for 2 to4 hours.

STEP 5.5 then remove the cucumber from the bowl and dry the pieces by spreading them out on a kitchen paper towel.

STEP 6.6 when the cucumber has dried , place it in a bowl and add 2 tbsp sugar, 20 ml white vinegar, 4 finely chopped cloves of garlic and 1 tsp chilli flakes and mix well.

STEP 7.7 transfer the cucumber and any liquid from the bowl to an airtight jar. Seal it.

STEP 8.8 store it for two days. Then serve.
