STEP 1.in a small bowl combine 1 tsp corn flour with 25 ml water to make a smooth mixture.

STEP 1.in a wok heat 2 tsp oil on medium heat, add 10 gm thinly sliced ginger, 5 cloves thinly sliced garlic, 2 roughly chopped spring onions,1 tsp spicy bean sauce and stir fry for 10 seconds.

STEP 1. add 600 gm washed mussels and stir together. add 1 tsp rice wine, then cover and cook for 2 minutes.

STEP 1. when all the mussels have opened remove the cover, add 1 tsp sugar, ½ tsp ground white pepper, salt to taste, 1 tsp light soy sauce and the prepared corn flour water mixture.

STEP 1.6 add ½ red and ½ green pepper cut into bite size pieces and stir well together and cook for 1 minute.

STEP 2.7 discard any mussels that are still closed.
step 8
STEP 3.8 transfer toa dish and serve hot.
