  • 2 No.s Chicken Breasts
  • As required Ingredients for marinade
  • 1 Ripe mango chopped
  • 1 No.s Juice of lemon
  • 8 Garlic Cloves
  • 1 teaspoon Olive oil
  • 1/2 teaspoon Salt
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon Fish sauce
  • As required Ingredients for sauce
  • As required Leftover marinade
  • 1 tablespoon Cornflour
  • 1/2 cup Water
  • 1 teaspoon chilli sauce
  • 1 teaspoon Honey
  • As required Salt

Directions: Spicy Lime Mango Grilled Chicken Recipe

step 1

  • STEP 1.1 to make the marination, in a mixer jar add 1 chopped ripe mango, juice of 1 lemon, 8 cloves garlic, 1 tsp olive oil, ½ tsp salt, 1 tsp sriracha sauce for spice, 1 tsp fish sauce. Grind to make a smooth paste.

  • STEP 2.2 cut slits in 2 chicken breasts and put in a bowl. Pour the marinade over the chicken and mix to coat the chicken well. Marinate for at least an hour.

  • STEP 3.3 preheat a grill pan and brush it with oil. Turn the heat to medium,shake off the excess marinade from each chicken piece and place the chicken breasts on the pan. Allow to grill for 3 to 4 minutes on each side till brown and cooked and soft.

  • STEP 4.4 remove the grill pan from the heat and keep aside.

  • STEP 5.5 to make the sauce for the chicken, place a pan on the heat and add the leftover marinade in the pan, add 1tsp chilli sauce, 1 tsp honey and salt to taste

  • STEP 6.6 in ½ bowl of water add 1 tbsp cornflour and mix thoroughly. Add this to the sauce and bring it to the boil. Mix till the sauce thickens and keep stirring so that no lumps are formed. Once the sauce is thick and cornflour has cooked, turn off the heat.

step 7

  • STEP 7.7 serve the chicken topped with the lemon mango sauce along with lemon parsley quinoa.
