STEP 1.in a saucepan bring 1 litre water to a boil, add 600 gm beef cut into bite size chunks and boil for 1 minute. Then remove and drain the beef.

STEP 1. in a wok heat 1 tsp oil, add 2 spring onions cut into 1 inch pieces, 6 cloves of sliced garlic, 10 gm sliced ginger, 1 star anise, 6 dried chilies, 10 gm cinnamon and stir fry for a few seconds.

STEP 1.add the blanched beef pieces, and stir fry for 2 minutes.
STEP 1.add water to just cover the beef and bring it to a boil.

STEP 1. turn the heat to low, cover the pan and simmer for 90 minutes.

STEP 1.then uncover the pan, add 1 tsp sugar and stir.

STEP 1. add a small bunch of roughly chopped coriander and stir.

STEP 1. transfer to a dish and serve.
