STEP 1.1 place 400 gm thinly sliced beef in a bowl, add 1 egg white, 1 tbsp cooking wine and mix well.

STEP 2.2 in a wok heat ½ ltr oil on high heat, add the beef and deep fry for 5 minutes.

STEP 3.3 use a slotted spoon to remove and drain the pieces of beef. Keep aside.

STEP 4.4 discard most of the oil. Retain only a small amount in the wok and add 1 roughly chopped spring onion, 3 roughly chopped large dried chillies, 5 thinly sliced cloves of garlic, 10 gm finely chopped ginger. Stir fry for 1 minute.

STEP 5.5 add 3 tbsp sichuan spicy chili paste. Stir fry for 1 minute.

STEP 6.6 add thinly sliced stick of celery, 80gm thinly sliced button mushrooms and stir fry for 1 minute.

STEP 7.7 add the fried beef and salt and stir together well.

STEP 8.8 add 1 tbsp dark soy sauce, 1 tbsp sugar and stir fry for 1 minute.

STEP 9.9 add 1 tbsp peanuts and 1 tsp sesame seeds and stir.

STEP 10.10 garnish with chopped coriander and serve hot.
