A tasty healthy carrot cake made with whole wheat flour ( atta) and subtle spices.The Spiced Multigrain Carrot Cake Recipe has a perfect taste from the grated carrots, spices and olive oil and with the goodness of whole grains added to the cake. This is one cake that I love having along with my evening chai, when it is warm out of the oven.The cake mix is made from whole grains like jowar, barley & whole wheat flour that are packed with proteins, minerals and fibre and yet has all the richness and flavor of a traditional Vanilla Cake.

  • 1/2 cup Nutralite classic spread
  • 1 cup Sugar
  • 3 Eggs Nos
  • 2 cup Whole Wheat Flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon powder
  • 1 teaspoon Dry ginger powder
  • 2 cup Grated carrots
  • 1/4 cup Chopped walnuts
  • 1/4 cup Milk

  • STEP 1.Measure out all the ingredients. ½ cup nutralite classic spread

    • STEP 2.1into a stand mixer add ½ cup nutralite classic spread, 1 cup sugar and 3 eggs. Beat till fluffy.

    • STEP 3.2next add 2 cups whole wheat flour, 2 tsp baking powder, 1 tsp cinnamon powder, 1 tsp dry ginger powder, 2 cups grated carrots, ¼ cup chopped walnuts and ¼ cup milk.

    • STEP 4.3blend till just combined without over beating.

    • STEP 5.4grease a bread loaf pan or a springform pan by smearing nutralite classic spread all over the inside of the pan and then dust it with flour tapping and turning the pan so that the flour sticks to all the sides and the bottom. Turn the pan over a tray or the sink and give it a tap to remove the excess flour.

    • STEP 6.5fill the cake tin with the batter. Gently spread it evenly.

    • STEP 7.6place the cake tin in a preheated oven at 180 degrees celsius and bake for 40 to 45 minutes.

    • STEP 8.7to check whether the cake is cooked, insert a knife into the cake. It should come out clean without any sticky cake batter stuck to it.

    • STEP 9.8once it’s done remove it from the oven and allow it to cool before taking it out of the pan.

    • STEP 10.9when cooled place the cake in a plate and dust with icing sugar.
