Cooking Directions

  • STEP 1.Preheat the oven to 180°C (350°F).
  • STEP 2.Cut the tops off the capsicums and remove the seeds and membranes.
  • STEP 3.In a large skillet, heat olive oil over medium heat. Add onions, garlic, and spices, and cook until onions are soft and fragrant.
  • STEP 4.Add lentils, vegetable broth, and diced tomatoes to the skillet. Bring to a boil, then reduce heat and simmer until lentils are tender.
