  • 1/4 tablespoon Extra virgin olive oil, 1 turn of the pan, plus some for drizzling
  • 1/4 tablespoon Unsalted butter
  • 1/4 Small red onion, 1/2 chopped and 1/2 thinly sliced

  • 1/2 teaspoon Dried oregano, lightly crushed in the palm
  • 0.33 pound Ground chicken breast or ground turkey breast
  • 0.06 pound Crumbled Feta Cheese
  • 1/4 tablespoon Grill seasoning, such as montreal steak seasoning by mccormick
  • 1/2 inch 1/4 seedless cucumber, thinly sliced, plus one length of cucumberpeeled, trimmed and coarsely chopped
  • 1/4 Plum tomato, thinly sliced
  • 1/4 cup Coarsely chopped arugula
  • As required Hot pepper rings or pepperoncini
  • 1/4 Juice lemon
  • As required Salt and freshly ground pepper
  • 1 Crusty rolls, split
  • 1/4 cup Plain yogurt, preferably greek
  • 1/2 Whole roasted red peppers, drained
  • 0.06 cup Flat Leaf Parsley
  • 2.50-3 Pitted calamata olives
