STEP 1.To begin, wash the dal well so that the water is absolutely clear. Soak it in water for at least two hours. Drain and keep aside.
STEP 2.Heat 2 tbsp of oil in a pan. Add in the whole jeera and allow it to crackle.
STEP 3.Add in the finely chopped ginger and garlic and saute for a minute.
STEP 4.Add in the chopped onions and saute until translucent. Add in the chopped tomatoes and saute for a minute.
STEP 5.Add in the drained dal and mix well. Cook for a minute or two.
STEP 6.Now add in the dry masalas - salt, Kashmiri red chilli powder, turmeric powder, and hing. Mix well.
STEP 7.Add in 2 cups of water. Mix well. When it starts to boil, lower the heat and cover it with a lid. Cook on low heat until the water dries up. Stir occasionally. Do not add extra water. There should be a bite in the dal.
STEP 8.When the water has dried up, finish it with the juice of one lemon. Mix well.
STEP 9.The Sookhi Dal Amritsari is ready to serve. Sprinkle a bit of garam masala on top and garnish with coriander leaves.
