  • 1 cup Yogurt
  • 1 cup Water
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Roasted Cumin Powder
  • 1 tablespoon Chopped Coriander Leaves
  • 1/2 tablespoon Ghee
  • 1/4 teaspoon Mustard Seeds
  • pinch A Pinch Of Asafoetida
  • as needed A Few Curry Leaves
  • 1/2 piece Small E Of Charcoal

Cooking Directions

  • STEP 1.In a blender, blend yogurt, water, salt, roasted cumin powder, and chopped coriander leaves.
  • STEP 2.Heat ghee in a small pan and add mustard seeds, asafoetida, and curry leaves.
  • STEP 3.Pour the tempering over the blended buttermilk and mix well.
  • STEP 4.Place a piece of charcoal on a flame until it turns red hot.
  • STEP 5.Place the hot charcoal in a small bowl and keep it in the center of the buttermilk.
  • STEP 6.Drizzle a few drops of ghee on the charcoal and cover the bowl with a lid for a few minutes to infuse the smoky flavor.
  • STEP 7.Remove the charcoal and serve the smoked buttermilk chilled.

Cooking Tips

  • Use fresh and thick yogurt for a creamy and smooth texture.
  • You can adjust the consistency of the buttermilk by adding more or less water.
  • For a spicier version, add finely chopped green chilies or mint leaves.
