STEP 1.1) Take a non stick pan and dry fry peanuts, sesame seeds and grated coconut. Then keep this aside. Add some water and make a fine paste of it.
STEP 2.2) Now cut the brinjal longitudinally starting from the bottom. Remember to not cut the brinjal till top so that the brinjal is cut but the longitudinal pieces remain attached to the top.
STEP 3.3) Now pour some oil into the non stick pan and fry the brinjals for some time. Keep them aside.
STEP 4.4) Pour some oil into the pan again and then add whole mustard and whole cumin seeds, cinnamon, cardamom, dry red chillies. When they start to crackle, add chopped onions, turmeric powder, cumin powder, red chilli powder, coriander powder. Stir for 3 to 4 minutes. Then add the paste made previously in step 1 . Mix well and add half cup of water. Now add tomato puree and chopped coriander leaves. Stir well. Cover with a lid and cook on low flame for 6 to 8 minutes.
STEP 5.5) Add fried brinjals into the gravy. Then add curry patta. Cover with a lid and cook for another 5 to 7 minutes.
STEP 6.6) Now add tamarind pulp and curd. Mix well.
STEP 7.Take a bowl and put 2 or 3 pieces of burning charcoal into it. Then pour some ghee into this bowl and place this bowl over the gravy. Cover with a lid and cook on low flame for another 2 minutes.
STEP 8.Smoked Baingan Salaan is ready. Setve hot with chapattis.
