An easy and quick small pot rice noodles recipe. China's Yunnan Province is known for its rice noodles and this noodle soup dish is very popular there. It's a great mixture of textures and flavors like spicy, tangy, and savory all at once.
STEP 1.1. Ferment the rice for 7 days. Make sure you keep watering it 2 times a day.

STEP 2.Now after fermentation grind the rice in paste. Settle and filter. Keep covered for 24 hours. Remove the water the next day and mix well. Settle again.

STEP 3.Take the rice the next day in a cotton cloth and press for a day. Use an iron slab.

STEP 6.1. Make balls that rice and boil for 10 minutes. The rice paste is almost ready now we take it out. Pound the rice paste.

STEP 8.3. Take a noodle maker and make noodles in boiling water. Boil for 5 minutes. Then rest it in cold water. Noodles are ready to be cooked.

STEP 9.4. In a boiler, throw in some pig bones, mushrooms, shallots, ginger and spices. Stew for 2 hours.

STEP 10.5. Grind the rest of the pork meat, marinate with soy sauce, pepper,tsao ko, sichuan pepper and mix well. Cut some shallots and chop some garlic.

STEP 11.6. Heat up a wok and fry all the vegetables until fragnant. And then mix them in a bowl full of white sesame seeds and red chillies. Fry the pork meat and garlic.

STEP 12.7. Combine all the dishes, the stew, pork, chilli oil, vegetables and noodles in a bowl. Serve hot and fresh.
