It's kind of an Asian meets fall flavors recipes. I know that sounds a little weird, but it works. The fish is a little spicy and full of a delicious cilantro chile sauce. There is a little ginger, fish sauce, garlic and allspice going on too. YUM.
Ingredients for Slow Roasted Cod With Brown Sugar Pineapple Glazed Acorn Squash. Recipe
1/4 medium acorn squash sliced into half moons
0.13 a ripe pineapple cored + cubed
1.50 tablespoon butter cubed
3/4 tablespoon Brown Sugar
1/4 teaspoon Cinnamon
As required salt and pepper
0.13 cup cilantro leaves and stems separated, stems finely chopped
1/4 fresno chile seeded if desired, finely chopped
1/2 cloves garlic finely grated
0.06 cup sesame or peanut oil
1/4 tablespoon tomato paste
1/4 tablespoon fish sauce may use soy instead
1/4 tablespoon apple cider vinegar
1/4 tablespoon honey
1/2 teaspoon fresh ginger grated
1/4 teaspoon sambal oelek
0.06 teaspoon ground allspice
0.38 pound skin on black cod or cod fillet
As required arils from one pomegranate for serving
