This is a fantastic slow-cooker recipe that can be prepared in just a few minutes. It is a fun twist on the traditional Mexican barbacoa which is prepared from goat meat. Barbacoa chicken can be served in many ways including tacos, burrito bowls and quesadillas. To stay keto-friendly, you can also serve it on top of lettuce for a Mexican salad.

  • 0.33 pound Boneless Skinless Chicken Breast
  • 0.33 canned chipotles peppers in adobo sauce, minced
  • 0.33 tablespoon Tomato paste
  • 0.17 tablespoon Apple cider vinegar
  • 0.67 garlic cloves, minced
  • 0.17 onion, quartered
  • 0.33 teaspoon Cumin
  • 0.17 teaspoon Oregano
  • 0.17 bay leaf
  • 0.06 cup Low sodium chicken broth

Directions: Slow Cooker Barbacoa Chicken Recipe

Cooking Directions

  • Season the chicken with salt and pepper and place in the crockpot along with the onion, garlic clove, and bay leaf.
  • Stir together the chipotles in adobo sauce, tomato paste, apple cider vinegar, cumin, oregano, and chicken broth. Add to the crockpot and stir together. Cook on low for 4 hours.
  • When ready, remove the onions and bay leaf. Shred using two forks and return the chicken to the slow cooker for 10-15 minutes so it can soak up the flavour in the sauce.

Cooking Tips

  • Don't overcook the chicken. It will be ready on low after just 3-4 hours. If you allow it to cook for longer than that, the chicken can get tough and hard to shred.
  • Use leftover shredded chicken to make these delicious baked crispy chicken tacos.

  • Serve as tacos, burrito bowls, quesadillas, and more.
  • Barbacoa chicken can be stored in an airtight container for up to 1 week.
