The original recipe is made for the stovetop, but I ended up adapting it for the slow cooker to make things a little simpler. Plus, I just love the idea of chicken soup slow cooking all day long. I mean, the smell alone is worth making this!
Ingredients for Slow Cooker Hearty Chicken Soup Recipe
3/4 cup low sodium chicken stock
1/4 tablespoon Butter
1/4 tablespoon extra virgin olive oil
1/4 onions, chopped
1/2 carrots, chopped
1/4 parsnips, chopped
1/4 ribs celery, chopped
1/4 leeks, chopped
1 Peppercorns
0.13 bay leaf
1/2 sprig fresh thyme
1/4 sprig fresh rosemary
1/4-0.38 pound bone in chicken breasts or thighs
As required kosher salt and black pepper
0.13 juice + zest of lemon
0.09 cup dry farro
0.06 cup fresh cilantro and or mixed herbs
