Ingredients for Lamb Massaman Curry Recipe

  • 1/5 Red onion chopped
  • 0.40-0.60 Red chillies depending on how hot you like it, roughly chopped
  • 0.40 teaspoon Ground coriander
  • 0.40 teaspoon Cumin
  • 1/10 teaspoon Cinnamon
  • 1/10 teaspoon White pepper
  • 0.60 Cloves of garlic peeled
  • 0.40 stick Lemongrass outer leaves removed, softer inside chopped finely
  • 1 centimeter Piece ginger peeled and roughly chopped
  • 1/5 teaspoon Shrimp paste optional, also its generally gluten free, but best to check
  • 0.60 teaspoon Fish sauce
  • 1/5 teaspoon Brown sugar
  • 2 Fresh coriander/cilantro stalks youll be using the leaves later to server, so just wrap them in a bit of damp tissue to keep them fresh
  • 1/10 teaspoon Salt
  • 0.40 tablespoon Vegetable oil
  • 1/5 kilogram Casserole lamb chopped into chunks
  • 0.30 tablespoon Cornflour
  • pinch Pinch of salt and pepper
  • 80 milliliter Beef/chicken/lamb stock 2 stock cubes with water is fine use kallo beef bouillon cubes for gluten free
  • 80 milliliter Can coconut milk its usually gluten free, but double check
  • 0.40 Large red or white potatoes peeled and chopped into chunks
  • 50 gram Green beans roughly chopped
  • 1/5 Juice lime
  • As required Boiled rice
  • As required Chopped fresh coriander/cilantro
  • As required Chopped red chillies
  • As required Lime wedges
