  • STEP 1.Heat oil in a pan and add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
  • STEP 2.Add chopped onions and sauté until golden brown.
  • STEP 3.Add ginger-garlic paste and cook for a minute.
  • STEP 4.Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and mushy.
  • STEP 5.Add tamarind pulp and jaggery. Mix well and cook for a few more minutes.
  • STEP 6.Add water to adjust the consistency of the curry. Simmer for 5-10 minutes.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice or roti.
