A spicy and crunchy stir fry of pork and cucumbers with peanuts. This is a deliciously spiced pork dish. Tender pork is stir-fried with stem lettuce in a fiery chile sauce. Enjoy with freshly cooked white rice.

Directions: Sichuan Style Pork Fry Recipe
step 1
STEP 1.-1)in a small bowl add 1 tbsp cornflour and 50 ml water. Stir well to make a smooth mixture.

STEP 2.-2)in a large mixing bowl add 250 gm pork fillet cut into 1 cm cubes.
step 3
STEP 3.-3)add 1 tbsp of the prepared cornflour and water mixture, 1 tbsp oil, 1 ½ gm chicken powder, salt to taste and mix well till all the ingredients are well combined. Leave aside to marinate.

STEP 4.-4)heat ½ ltr oil in a wok or pan and add the marinated pork.
step 5
STEP 5.-5)stir gently to separate the pieces as they fry to prevent the pork from sticking to each other.

STEP 6.-6)fry for 2 minutes and then use a slotted spoon to remove and drain the pieces.

STEP 7.-7)in a pan heat 1 tbsp oil, add 10 gm finely chopped ginger, 6 chopped cloves of garlic, 2 chopped spring onions and fry for a few seconds till aromatic.

STEP 8.-8)add 7 roughly chopped dried red chillies and stir.

STEP 9.-9)to this add 200 gm cucumber cut into 1 cm cubes. Stir together.

STEP 10.-10)next add the fried pork and stir for 2 minutes.

STEP 11.-11)pour in 20 ml chilli oil, 10 ml cooking wine, salt to taste and the remaining cornflour water mixture and stir together well.

STEP 12.-12)then add 70 gm peanuts and stir fry for 1 minute. Turn off the heat.
step 13
STEP 13.-13)transfer to a dish and serve
