STEP 1.Pre mix sauce oyster sauce, light soy sauce, dark soy sauce, sesame oil, sugar, white pepper, chicken bouillon and mix well. (all in the quantities mentioned)

STEP 1.Add cooking oil in a hot wok, stir fry ginger to the toasted stage but not burnt.

STEP 2.Add chicken meat to it and then add water soaked mushrooms. After 5 minutes add the pre mix sauce.

STEP 3.Add water to it and bring it to a boil and simmer for 20 minutes. Discard the spent ginger and continue to boil to reduce sauce and water.

STEP 4.Then add rice wine and transfer to a serving plate.
