STEP 1.Take a bowl and add 1tsp salt, 1tsp turmeric powder and some water.
STEP 2.Peel the raw banana and immerse it in salt-turmeric solution. Let it rest for 10 mins.
STEP 3.After 10 mins, rub it with a scrubber. Wash and pat dry.
STEP 4.Cut it into two halves vertically. Then cut it into small and equal pieces horizontally, with medium thickness.
STEP 5.Heat coconut oil in a pan and fry the pieces in medium flame. When crispy, transfer it to a paper towel. Fry it in batches.
STEP 6.After frying the pieces, heat a pan and add 200gm jaggery, ½ cup water. Allow the jaggery to melt. Then turn off the flame and filter the jaggery solution.
STEP 7.Heat the filtered jaggery solution to attain one string consistency. Add a pinch of salt when it starts to boil.
STEP 8.Take a bowl and add 1 tsp cumin powder, 1 tsp dry ginger powder and ½ tsp cardamom powder. Mix it well.
STEP 9.Take 1 tsp of the prepared powder and add it to the jaggery syrup. Mix well and maintain medium flame.
STEP 10.When the jaggery syrup attains one string consistency add the fried pieces of banana and maintain low flame. Mix it well.
STEP 11.Add 1 tsp of prepared powder and 1 tbsp powdered sugar.Mix well. Let the syrup fry up. Turn off the flame.
STEP 12.Add 1 tbsp powdered sugar and 1 tsp rice flour. Mix it well.
STEP 13.Sharkara varatti is ready to be served.
