A sweet and spicy stir fry of chicken. Introducing this sticky, richly-flavoured Shanghai chicken with rice. It’s quick and tasty – ready and on the table in only 15 minutes, making it just perfect for a mid-week meal.
600 piece Chicken thigh fillet cut into bite size gm
20 gram Ginger finely chopped
4 No.s Spring onions finely chopped
4 Garlics finely chopped clove
2 No.s Red chillies thinly sliced
2 tablespoon Shaoxing rice wine
5 teaspoon Chinese spice powder 1 0.5
1.50 tablespoon Dark soy sauce
1.50 tablespoon Brown sugar
2 tablespoon Oil
Directions: Shanghai Style Chicken Recipe
step 1
STEP 1.1 in a wok heat 2 tbsp oil on high heat, add 600 gm chicken thigh fillets cut into bite size pieces. Stir fry for 5 minutes .

STEP 2.2 add 20 mg finely chopped ginger, white part of 4 spring onions finely chopped, 1 ½ tsp chinese 5 spice powder, 4 cloves of finely chopped garlic, 1 thinly sliced red chilli pepper and stir fry for 3 more minutes.

STEP 3.3 then add 2 tbsp rice wine, 1 ½ tbsp dark soy sauce, 1 ½ tbsp brown sugar, 50 ml water and mix well to combine all the ingredients.

STEP 4.4 turn the heat to medium and cook for 8 minutes. Stir regularly.

STEP 5.5 then turn the heat to high and stir well to ensure that the chicken is well coated with the sauce. Turn off the heat.

STEP 6.6 transfer to a serving dish and garnish with finely chopped green part of 4 spring onions and 1 thinly sliced red chili pepper
