Noodles tossed in a flavourful mixture of soy sauce and crispy fried spring onions. Shanghai fried noodles is a dish made from Shanghai-style noodles, which can be found in most Chinese food markets. The more commonly known Japanese udon can be used as a substitute. The noodles are typically stir-fried with beef cutlets, bok choy, and onion, or with pork and Chinese yellow chives. Shanghai Noodles (Cu Chao Mian) These Chinese fried noodles feature thinly sliced pork, cabbage, garlic, ginger, green onions, and a sauce that will make your mouth water. Quick and easy to make, they're perfect for a weeknight meal.

Ingredients for Shanghai Noodles Recipe

  • 200 gram Noodles
  • 2 Water to boil noodles lt
  • 2 inch Spring onions cut into long thin slices 100gm
  • 1 tablespoon Light soy sauce
  • 1/2 tablespoon Dark soy sauce
  • 1/2 teaspoon Sugar
  • 4-6 tablespoon Peanut oil
  • As required Salt

Directions: Shanghai Noodles Recipe

step 1

  • STEP 1.In a medium size mixing bowl add 1 tbsp light soy sauce, ½ tbsp dark soy sauce, salt to taste, ½ tsp sugar and mix well.

  • STEP 1.Heat 4 to 6 tbsp peanut oil in a pan on medium heat.

step 3

  • STEP 1.Add 100 gm spring onions thinly sliced and fry till crispy brown. Stir occasionally.

step 4

  • STEP 1.Then transfer the fried spring onions and hot oil to the bowl with the soy sauce mixture.

step 5

  • STEP 1.Bring 2 litres of water to boil in a saucepan and add 200 gm noodles.

step 6

  • STEP 1.Boil until noodles are cooked. Then remove and strain the noodles.

step 7

  • STEP 1.Add the cooked noodles to the spring onion and soy sauce mixture.

step 8

  • STEP 1.Using chopsticks or tongs, mix well to ensure that the noodles are well coated with the sauce mix.

step 9

  • STEP 1.Shanghai noodles are ready.
