1/2 pound Beef ribeye or new york or filet mignon you want whole steak size pieces. don't cut it into cubes
As required Salt to season the beef
1/2 teaspoon Black pepper you want to give the beef a liberal coating of semi-coarsely ground pepper
1.50 Cloves garlic minced
1 tablespoon Vegetable oil plus a little more if the pan is dry when you add the garlic
1 teaspoon Dark soy thai sweet soy preferably
3/4 tablespoon Oyster sauce thai preferably
1/2 tablespoon Fish sauce
1 tablespoon Mirin
1/2-1 teaspoon Sugar or even more if you like things a bit sweet
1 teaspoon Sesame oil
1/2 tablespoon Rice vinegar to taste this will be mixed with the hot sauce after you deglaze your pan
1.50 cup Watercress or baby greens of your choice
0.13 cup Red Onion Thinly Sliced
1/4 cup Cherry tomatoes cut in 0. 5 go with the best you can get
