Seviyan kheer is also known as Vermicelli Kheer is a must at any festival at our place. Is also known in South India Semiya Payasam. This Payasam is a South Indian sweet made with vermicelli, milk, ghee, sugar/ jaggery, raisins and nuts. It is one of those easiest dessert that gets done under 20 minutes. So you can make this any time to fulfil your sweet cravings and don't really need an occasion. This creamy seviyan kheer is a North Indian sweet made with wheat vermicelli, milk, sugar, dry fruits and flavored with spices. This incredibly easy recipe of semiya kheer comes together in 20 minutes and makes for an excellent dessert or sweet that can be eaten as is or served with a North Indian meal..

Ingredients for Seviyan Kheer OR Semiya Payasam Recipe

  • 1/4 tbsp Ghee (clarified butter)
  • 12.50 gram seviyan sev
  • 1/4 Kg liter full fat milk
  • 1/4 cup Sugar
  • 1/4 tsp Cardamom powder
  • 2.50 Pieces no. Chopped Cashew nuts slices
  • 2 Pieces no. Chopped almond slices
  • 2 Pieces no. Chopped pistachio sluces
  • 1/4 tsp Raisins
  • 2.50 g saffron string soaked with warm milk
  • 1/4 g For garnishing
  • 1/4 g Chopped dry fruits as par required
  • 2 Pieces Dry rose petals as per required

Directions: Seviyan Kheer Or Semiya Payasam Recipe

  • STEP 1.1️⃣ In a heavy bottom pan over medium heat add ghee and once it melts add the vermicelli. Stirring it continuously roast the vermicelli for around 2 minutes or until it turns golden brown in colour and releases an aromatic smell.
  • STEP 2.2️⃣ In another pan add milk and bring it to a boil. Add the roasted vermicelli in the milk and cook for around 15 minutes or until the vermicelli is cooked. It will double in size.
  • STEP 3.3️⃣ Now add sugar, saffron milk, almonds, cashews, pistachio, raisins and cardamom powder.. and while stirring it continuously cook or around 5-8 minutes or util the sugar dissolves completely and the kheer turns slightly thick.
  • STEP 4.4️⃣ Now our Seviyan Kheer is ready for serve hot or cold. Garnish with dry fruits and dry rose petals..Can be stored in the refrigerator for up to a week.
