A light fluffy scrambled egg preparation with juicy and perfectly cooked shrimp.The scrambled eggs were fast and easy, and the flavor was great. It was a nice change of pace from plain scrambled eggs, and it would make a nice lunch, brunch, or "breakfast for dinner" dish. I prepped, cooked, and had the dish on the table in 10 minutes.

Ingredients for Scrambled Egg With Shrimp Recipe

  • 2 Garlic ground cloves
  • 1 teaspoon Ginger
  • 6-8 ounce Shrimp
  • 6 Eggs Nos
  • 1/2 teaspoon Salt
  • 2-3 tablespoon Oil
  • 3 tablespoon Scallion chopped

Directions: Scrambled Egg With Shrimp Recipe

step 1

  • STEP 1.1 in a bowl add 6 oz cleaned shrimp. Pat them well with a kitchen paper towel to remove all excess moisture.

  • STEP 2.2 to this add 2 cloves ground garlic, 1 tsp ground ginger, ¼ tsp salt, freshly ground black pepper and 2 tsp olive oil. Mix well to ensure shrimp are well coated. Set aside for 10 minutes.

  • STEP 3.3 in a large mixing bowl crack 6 eggs, add ½ tsp salt. Whisk well.

  • STEP 4.4 heat the wok on maximum heat till it smokes. Ad 2 to 3 tbsp oil and swirl so it covers the surface of the hot wok. Heat the oil.

  • STEP 5.5 when the oil starts to smoke lightly, add the shrimp.spread it out and let it cook for less than 30 seconds on high heat. Be careful not to burn the garlic bits. When the shrimps change colour flip them over and fry the other side.

  • STEP 6.6 when the shrimp turn pink, turn the heat to low and push the shrimp to the side of the wok so there is room for the eggs on the bottom of the wok.

  • STEP 7.7 pour in the whisked eggs. Once the edge of the eggs is slightly cooked use a spatula and pull the cooked egg to the centre and the uncooked egg will run to the sides.

  • STEP 8.8 wait for the edges to cook and then pull it to the centre. Repeat this process.this will take a few minutes.

step 9

  • STEP 9.9 when there is only ⅓ of the liquid egg left in the wok, mix in the shrimp and slowly fold in with the eggs. fold in and stir till all the liquid egg has cooked.

step 10

  • STEP 10.10 then add 3 tbsp chopped scallion and mix. Turn off the heat.

step 11

  • STEP 11.11 this can be served with sausage and bacon or with rice as a brunch.
