Wontons are a type of Chinese dumpling usually found in Chinese cuisines. The Western Han Dynasty's Yang Xiong mentioned “bing Wei Zhi tun”, which means wontons are a form of bread. Schizuan wontons are traditionally known as suanla chaoshou. The difference between a dumpling and a wonton is that a dumpling is formed of dough and has either ingredients or a filling, but a wonton is a traditional Chinese dumpling with meat (chicken wonton) or seafood (shrimp wonton) and vegetables. Schizuan spicy wontons are prepared with sweet soy sauce, raw garlic, roasted red chile, and a dash of vinegar to keep things balanced. The flavours of raw garlic and chilli oil bind well with the filling that gives it a fiery taste. Schizuan-style wontons are simple to make and come with an incredibly aromatic sauce mixed with vinegar, garlic, and roasted chilli oil. The sauce makes the pork filling juicy, tender, sweet and sour which gives a smoky flavour to every bite.

Ingredients for Schizuan Wontons Recipe

  • 170 gram Ground Pork
  • 1 tablespoon Scallions
  • 1/2 teaspoon Sesame oil
  • 1 teaspoon Soy sauce
  • 2 teaspoon Shaoxing Wine
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Sugar
  • 1 tablespoon Peanut oil
  • 0.33 cup Water
  • 1 pinch White Pepper
  • 18 No.s Wonton Wrappers
  • As required For The Sauce
  • 3 tablespoon Light soy sauce
  • 1/2 tablespoon Chinese Black Vinegar
  • 6 tablespoon Homemade chilli oil
  • 1/4 tablespoon Salt
  • 1 tablespoon Sesame paste
  • 2 tablespoon Sugar
  • 2 No.s Garlic Cloves

Directions: Schizuan Wontons Recipe

step 1

  • STEP 1.In chilli oil, add all the wontons ingredients (ground pork, sesame oil, soy sauce, Shaoxing, white pepper, salt, sugar, oil, water in a bowl. Whip it using a tosser.

step 2

  • STEP 1.Add the wonton filling in a bowl and whip using your hands for 5 minutes. Take a wonton wrapper and add about a teaspoon of filing. Use fingers to coat the edges with water  or egg.

step 3

  • STEP 1.Fold the wonton in half to add another drop of egg or water. Press to seal.

step 4

  • STEP 1.Boil a pot of water for the wontons. When it comes to a boil make the sauce by mixing all of the ingredients together in a small mixture.

  • STEP 1.Give the boiling water a good stir and drop the wontons in.

step 6

  • STEP 1.Use a slotted spoon to drain the water and transfer the wontons to a serving bowl. Garnish with scallion.
