A popular drumstick preparation in tangy tomato gravy. Basically made with the combination of peanuts, coconut milk, dry coconut, sesame seeds and garam masala with the topping of onion and tomato. This recipe is a unique south Indian curry and fresh drumstick in creamy curry. It is an ideal alternative to drumstick sambar recipe and can be easily shared with rice and chapati or any other type of bread.

Ingredients for Saragva Nu Shaak/Drumstick Sabji Recipe

  • 1 teaspoon Oil
  • 1 teaspoon Kalonji seeds
  • 1 stick Cinnamon inch
  • 2 Bay leaves torn Nos
  • 1 inch Ginger finely chopped
  • 1 sprig Curry leaves
  • 3 No.s Tomatoes finely chopped
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Red chillie powder
  • 1 teaspoon Coriander powder
  • As required Salt
  • 1.50 No.s Drumsticks cut into inch pieces 4
  • 1 tablespoon Jaggery

Directions: Saragva Nu Shaak/drumstick Sabji Recipe

step 1

  • STEP 1.Heat a pressure cooker, add 1 tsp oil, 1 tsp kalonji seeds and let it crackle. To this add 1 inch cinnamon stick, 2 bay leaves torn, 1 inch ginger finely chopped, 1 sprig curry leaves and 3 tomatoes finely chopped. Stir together.

  • STEP 1.Next add ½ tsp turmeric (haldi) powder, ½ tps cumin (jeera) powder, 1 tsp red chilli powder, 1 tsp coriander (dhaniya) powder and salt to taste. Saute for 2 to 3 minutes till the tomatoes become soft. Add 1 tbsp jaggery (optional).

  • STEP 1.At this stage add 4 drumsticks cut into 1 ½ inch pieces and give it a stir. Add ¼ cup water and pressure cook for 3 to 4 whistles. Release the pressure immediately to retain the fresh green colour of the drumstick. Open the cooker and check for salt and seasoning. Transfer to a serving dish.

  • STEP 1.Add chopped coriander leaves and serve hot.
