STEP 1.1 place shelled and deveined prawns in a bowl. Pat dry with a kitchen paper towel.

STEP 2.2 add 2 egg yolks, 35 gm cornflour, salt to taste and mix well to evenly coat the prawns.

STEP 3.3 in a wok heat 1 ltr oil. When hot add the prawns one at a time and deep fry for 1 minute.

STEP 4.4 use a slotted spoon to remove and drain the prawns. Discard the oil.
step 5
STEP 5.5 in another wok heat 1 tbsp oil, add 5 gm thinly sliced ginger , 3 cloves thinly sliced garlic and fry for a few seconds.

STEP 6.6 add ½ onion, ½ red and ½ green peppers cut into bite size pieces, 1 tsp light soy sauce, 1 tsp coarsely ground balck pepper and stir fry for a minute.

STEP 7.7 next add the prawns and salt to taste. Stir fry for 1m inute.
step 8
STEP 8.8 transfer to a dish and serve.
