1.50 Tsp ▢peanut
1/2 As Required Sugar to taste
As Required Salt -to taste
1/2 Tsp white oil / ghee
1/2 Tbsp ginger (finely chopped)
1/2 A Few Chill
1 Pieces Potato
1/2 As Required Lemon
1 Tbsp coriander leaves- chopped
Directions: Sabudana Khichdi Recipe
STEP 1.firstly, to soak the sabudana, take sabudana in a bowl and rinse with water.
STEP 2.make sure to rub the sabudana to remove excess starch.
STEP 3.rinse the sabudana twice and add water.
STEP 4.dip the sago completely, and rest for 6 hours. soaking time varies on the quality of sabudana.
STEP 5.once the sabudana is soaked well, make sure to check there is no water at the bottom. else the khichdi will turn mushy.
STEP 6.the sabudana must be able to mash easily when pressed between fingers. if it is still hard, then sprinkle some water and soak for 30 more minutes.
STEP 7.now in a heavy-bottomed pan roast peanut.
STEP 8.roast on low flame until the peanuts turn crunchy.
STEP 9.cool completely, and transfer to the mixer jar.
STEP 10.pulse and powder to a coarse peanut powder.
STEP 11.add the peanut powder to the soaked sabudana. adding peanut powder will help to absorb any excess moisture if present.
STEP 12.also, add sugar and salt. mix well combining everything well. keep aside.
STEP 13.now in a large kadai heat ghee. splutter cumin and few curry leaves.
STEP 14.add ginger, chilli and potato.
STEP 15.fry until the potato turn slightly golden brown.
STEP 16.further, add sabudana peanut mixture and mix gently.
STEP 17.make sure to mix by scarping the pan. this helps to prevent any sabudana from sticking.
STEP 18.also, be very gentle else there are chances for sabudana to be mashed out.
STEP 19.cook until the sago pearls turn translucent.
STEP 20.now add lemon and tbsp coriander. mix well.
STEP 21.finally, enjoy sabudana khichdi or pack to your lunch box.
