Ropa vieja has been one of the most popular cuban and puerto rican dishes for the last few years. However, there are other latin american countries with different versions. For example, you could find a similar dish in mexico called carne deshebrada. Ropa vieja means old clothes and the dish looks like shredded fabric. But dont let its appearance stop you. The combination of tomato, vegetables and olives provides a unique flavor. Traditionally it is served with rice, but in this occasion were going to give it a little twist to combine it with another popular dish: waffles. The waffles are cooked with bell pepper and olives. Theyre delicious alone and combined with ropa vieja they create an interesting and unique dish.
