A simple recipe for roasted vegetable pizza on top of my favorite whole wheat homemade pizza crust. Makes one 12-inch pizza or you can make two pizzas from my entire crust recipe and double the toppings listed below.

1/4 Recipe whole wheat pizza crust
1/2 Small eggplant, sliced thinly
1/2 Red Bell Pepper, Sliced
As required Artichoke Hearts
1/2 Small white or yellow onion, thinly sliced
1/2 cup Mushrooms, chopped
As required Olive oil for roasting veggies
0.17 cup Pizza Sauce
0.38 cup Shredded Mozzarella Cheese
11.50 tablespoon Grated Parmesan Cheese
