This easy roasted vegetable pasta is one of our favorite weeknight dinners. The combination of veggies listed below is excellent, but feel free to swap in whatever you have on hand.
1/2 inch Vidalia onions, or 1 small yellow onion, cut into 1 s
1.25 Small pattypan squash, sliced in half
1/2 inch Small zucchini, cut into 1 s
2.50 Cherry tomatoes
1/4 tablespoon Extra virgin olive oil, more for drizzling
1/4 tablespoon Sherry vinegar
1/2 Garlic Cloves, Minced
0.13 teaspoon Herbes De Provence
2 sprig Leaves from fresh thyme, more for garnish
1/4 ounce 16 package brown rice penne pasta
0.13 cup Crumbled Feta Cheese
0.13 cup Fresh basil, more for garnish
0.13 Juice of small lemon, more if desired
pinch Red pepper flakes
