One of my favorite soups has always been a roasted red pepper soup. The addition of chicken and corn really kicks it up a notch.

  • 3/4 tablespoon Buter
  • 0.13 cup All purpose flour
  • 1/2 Stalks celery diced diced
  • 0.13 Onion diced
  • 0.63 cup Roasted peppers pureed canned or make roast your own
  • 0.88 cup Chicken stock or vegetable stock
  • 1/4 tablespoon Sugar
  • 1/4-1/2 tablespoon Franks buffalo sauce
  • As required Sea salt to taste
  • 1 ounce Shredded cooked chicken
  • 1 ounce Roasted or grilled corn off the cob
  • 1/4 tablespoon Chopped cilantro garnish each bowl with a sprinkle
  • 1/4 tablespoon Garnish each bowl of soup with low fat greek yogurt or sour cream
