Ingredients for Rice Coconut Cake Recipe

  • 1.50 cup raw rice
  • 1/2 Nos fresh coconut
  • 3 tablespoon grated coconut
  • 1/4 teaspoon cumin seeds
  • 1/2 cup coconut water
  • 1 tablespoon Ghee
  • 1.50 cup Jaggery
  • 1 teaspoon black sesame seeds
  • 1/2 teaspoon cardamom powder

  • STEP 1.Soak rice in water for 4 hours

  • STEP 2.Grate coconut

  • STEP 3.Grind soaked rice,grated coconut,cumin seeds, coconut water and make a paste.

  • STEP 4.Slice fresh coconut in pieces.
  • STEP 5.Add 1 tsp ghee in a pan and heat it. Add sliced coconut pieces and fry it until it turns golden brown.
  • STEP 6.Add jaggery in 1/2 cup water and boil it to make a syrup. Now strain the hot jaggery syrup into the rice batter and mix well.
  • STEP 7.Then add black sesame seeds and cardamom powder. Add 1 tsp ghee in a pressure cooker and heat it.
  • STEP 8.Now add the rice batter , fried coconut pieces and cover with the lid. Cook at low flame for 10 mins without the pressure regulator.
  • STEP 9.Now rest it for 30 mins.
