  • 1/2 cup Chopped Rhubarb
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 1 ounce Gin
  • 1/2 ounce Rhubarb Syrup
  • as required Squeeze Of Lime Juice

Cooking Directions

  • STEP 1.To make the rhubarb syrup, combine chopped rhubarb, sugar, and water in a saucepan. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the rhubarb is soft.
  • STEP 2.Remove from heat and strain the syrup into a jar, discarding the solids. Let the syrup cool completely.
  • STEP 3.In a glass filled with ice, add 2 ounces of gin, 1 ounce of rhubarb syrup, and a squeeze of lime juice. Stir well.
  • STEP 4.Top with tonic water and garnish with a slice of lime. Serve and enjoy!
