Fried rice tossed with flavourful and colourful vegetables. It’s a simple and satisfying dinner. This vegetarian recipe features extra vegetables and brown rice. The only tricky part, which really isn’t so difficult, is to cook the eggs, vegetables and rice separately, and combine them all at the end. Each component will be cooked just right, and the vegetables and rice will get a chance to develop those delicious golden edges.

Ingredients for Red Cabbage Fried Rice Recipe

  • 1 cup Rice
  • 1.50 cup Water
  • 1 teaspoon Salt
  • 1 tablespoon Oil

  • 1 teaspoon Oil
  • 1 inch Ginger chopped
  • 1/2 cup Spring Onions chopped
  • 1/2 cup Beans finely chopped
  • 1/2 cup Carrots finely chopped
  • 1/2 cup Red Cabbage Chopped
  • 2 teaspoon Black Pepper crushed
  • 1 teaspoon Rice vinegar

Directions: Red Cabbage Fried Rice Recipe

step 1

  • STEP 1.In a pressure cooker add 1 cup washed rice, 1 ½ cup water, 1 tbsp oil, ½ tsp salt. Pressure cook for 3 whistles then turn the heat to simmer for 3 minutes. Turn off the heat and allow the pressure to release naturally.

  • STEP 1.Open the cooker and empty the rice onto a wide flat plate. Spread it out and allow rice to cool for 10 to 15 minutes.

  • STEP 1.In a hot pan add 1 tsp oil. When the oil is warm, add 1inch ginger finely chopped, ½ cup finely chopped spring onions with leaves. Saute for a few seconds.

  • STEP 1.Add ½ cup of finely chopped beans, ½ cup finely chopped carrots, ½ cup finely chopped red cabbage, ½ tsp salt. Stir fry on low heat. Cover the pan and cook, stirring intermittently. After 3 to 4 minutes turn off the heat.

  • STEP 1.Add the cool rice to the cooked vegetables. Add 2 tsp crushed black pepper, 1 tsp rice vinegar or apple cider vinegar.

  • STEP 1.Stir fry for 3 to 4 minutes. Chinese vegetable fried rice is ready.
