Ingredients for Rasmalai Modak Recipe

  • 1/5 tbsp - Hot Milk
  • 2 nos strands - Saffron (Kesar)
  • 35.20 grams or - Paneer - cut into
  • As required ½ TBSP + some more - Clarified Butter (Ghee)
  • As required ½ cup - Whole Milk Powder - Full Cream
  • 1 tbsp - Powdered Sugar
  • As required ¼ tsp - Green Cardamom (Elaichi) Powder
  • As required ½ TBSP + some more - Pistachios (Pista) - slivered
  • As required ½ TBSP + some more - Dried Rose Petals

Directions: Rasmalai Modak Recipe

  • STEP 1.Add saffron to hot milk, mix well and let it rest for 10 mins.
  • STEP 2.Grind paneer until smooth.
  • STEP 3.Heat clarified butter in a non-stick pan on low setting and add paneer, milk powder, powdered sugar and cook whilst mixing.
  • STEP 4.After sugar melts add saffron milk and cook whilst continuously mixing till moisture evaporates, mixture turns granular and starts leaving the sides of the pan. Take care so that it doesn’t stick to the pan and burn.
  • STEP 5.Then add green cardamom powder, mix well, remove in a bowl and let it cool down.
  • STEP 6.After mixture is cool to touch, grind it once again until smooth.
  • STEP 7.To this add pistachios and dried rose petals and knead to form a soft and smooth dough. DO NOT use milk or water to knead.
  • STEP 8.Grease the inside of modak mould with some melted clarified butter and sprinkle some dried rose petals and pistachios.
  • STEP 9.Place mixture inside the mould and make modaks.
  • STEP 10.Beautiful, delicious, melt-in-the-mouth Rasmalai flavoured Paneer Modaks are ready!
  • STEP 11.Serve or store in an air-tight container in the refrigerator.
