STEP 1.Wash and soak 3 ½ cups white rice for 45 minutes.

STEP 1.in a deep pan add 3 tsp oil, let it get hot. Add 10 to 12 broken cashew nuts and roast on medium to low heat till they are golden brown.

STEP 1.add 1 large onion thinly sliced, 6 slit green chilies and 1 tsp salt to help the onions to cook faster.

STEP 1. continue to saute on medium heat till the onions turn golden brown in color and are crispy.

STEP 1. next add 2 tsp ginger garlic paste and saute for 1 minute. Add ½ cup finely chopped pudina (mint) leaves.

STEP 1. saute till the raw smell of the mint leaves completely disappears.

STEP 1. at this stage add ½ kg bone-in chicken pieces cut small. combine well.

STEP 1. add required salt, 2 tsp red chili powder, ½ tsp turmeric (haldi) powder, 2 tsp coriander (dhaniya) powder and 2 tsp biryani masala powder. Mix all the ingredients together well with the chicken.

STEP 1. add 3 full tsp of thick curd and ½ cup of water. Stir well so that the chicken is well coated.

STEP 1.cover the vessel with a lid and cook on low to medium heat till the chicken is completely cooked. stir intermittently to ensure that the chicken does not stick to the bottom of the vessel.

STEP 1.once the chicken is completely cooked add 4 ½ cups of water and bring it to a boil.

STEP 1.now add 3 ½ cups of soaked white rice into the vessel with the chicken. Stir to combine.

STEP 1. add ½ cup chopped cilantro and mix well.

STEP 1.close the lid and cook on medium heat. Stir occasionally. Be gentle and do not break the rice grains.

STEP 1. when the rice is almost cooked, add 6 tsp of ghee.

STEP 1. cover the pan and continue to cook on low heat for 8 to 10 minutes.

STEP 1. once rice is cooked, open and mix gently so that the ghee is well mixed with the rice.

STEP 1.serve hot with raita and mirchi ka salan.
