Ingredients for Raju Gari Kodi Pulav Recipe

  • 3 tablespoon Oil
  • 10-12 No.s Cashew nuts borken
  • 1 No.s Onion large, thinly sliced
  • 6 green chillies slit
  • 1 teaspoon Salt
  • 2 teaspoon Ginger garlic paste
  • 1/2 cup Pudina leaves finely chopped
  • 1/2 piece Chicken bone in cut small kg
  • 2 teaspoon Red chilli powder
  • 1/2 teaspoon Turmeric powder
  • 2 teaspoon Coriander powder
  • 2 teaspoon Biryani masala powder
  • 3 teaspoon Thick curd
  • As required Water to mix with curd
  • 3.50 cup White rices soaked
  • 4.50 cup Water
  • As required Salt

step 1

  • STEP 1.Wash and soak 3 ½ cups white rice for 45 minutes.

step 2

  • STEP 1.in a deep pan add 3 tsp oil, let it get hot. Add 10 to 12 broken cashew nuts and roast on medium to low heat till they are golden brown.

  • STEP 1.add 1 large onion thinly sliced, 6 slit green chilies and 1 tsp salt to help the onions to cook faster.

  • STEP 1. continue to saute on medium heat till the onions turn golden brown in color and are crispy.

step 5

  • STEP 1. next add 2 tsp ginger garlic paste and saute for 1 minute. Add ½ cup finely chopped pudina (mint) leaves.

  • STEP 1. saute till the raw smell of the mint leaves completely disappears.

  • STEP 1. at this stage add ½ kg bone-in chicken pieces cut small. combine well.

step 8

  • STEP 1. add required salt, 2 tsp red chili powder, ½ tsp turmeric (haldi) powder, 2 tsp coriander (dhaniya) powder and 2 tsp biryani masala powder. Mix all the ingredients together well with the chicken.

  • STEP 1. add 3 full tsp of thick curd and ½ cup of water. Stir well so that the chicken is well coated.

step 10

  • STEP 1.cover the vessel with a lid and cook on low to medium heat till the chicken is completely cooked. stir intermittently to ensure that the chicken does not stick to the bottom of the vessel.

  • STEP 1.once the chicken is completely cooked add 4 ½ cups of water and bring it to a boil.

step 12

  • STEP 1.now add 3 ½ cups of soaked white rice into the vessel with the chicken. Stir to combine.

  • STEP 1. add ½ cup chopped cilantro and mix well.

step 14

  • STEP 1.close the lid and cook on medium heat. Stir occasionally. Be gentle and do not break the rice grains.

  • STEP 1. when the rice is almost cooked, add 6 tsp of ghee.

step 16

  • STEP 1. cover the pan and continue to cook on low heat for 8 to 10 minutes.

step 17

  • STEP 1. once rice is cooked, open and mix gently so that the ghee is well mixed with the rice.

step 18

  • STEP 1.serve hot with raita and mirchi ka salan.
