Directions: Rajasthani Royal Gatta Pulao Recipe
STEP 1.For Gatta
STEP 2.1.First mix besan,red chilli powder, salt,fennel seeds, ajwain ,curd ,add 2tsp oil and make dough.
STEP 3.2.Make small sized balls of dough and make cylindrical rolls of it.
STEP 4.3.Take water in a pan for boiling and cook rolls in it for 10 minutes.
STEP 5.4.Then cut the rolls in equal size for to make gatta.
STEP 6.5.Then deep fry gattas till brown in color.
STEP 7.Fir paste
STEP 8.Blend all ingredients together to make a paste.
STEP 9.For pulao
STEP 10.METHOD::
STEP 11.1.first boil rice and keep aside.
STEP 12.2.Take oil in a pan add hing,cumin seeds,mustard seeds,cardamom, bay leaf, Cinnamon stick.
STEP 13.3.Add cashew, raisins, garlic,onion ,green peas roast it.
STEP 14.4.Add paste and cook it.
STEP 15.5.Then add red chilli powder, turmeric powder, boiled rice.
STEP 16.6.Add salt,garam masala, mix gently.
STEP 17.7.Add coriander leaves.
