Rajasthani cuisine is known for its rich and vibrant flavors, and one of the most popular breakfast dishes in the state is kadhi kachori. This dish is a perfect example of the culinary mastery of Rajasthan, which combines different elements to create a unique and delicious dish.

Kadhi kachori consists of two main components – the kadhi and the kachori. The kadhi is a spicy yogurt-based curry, flavored with a blend of spices like cumin, coriander, and turmeric. The kachori, on the other hand, is a deep-fried pastry filled with a spicy mixture of lentils, potatoes, and onions. The combination of the tangy kadhi and the crispy kachori creates a burst of flavors and textures in your mouth, making it a popular breakfast choice among locals and tourists alike. Here is a simple recipe for the dish.

Ingredients for Kadhi

  • 2 cups of yogurt
  • ½ cup of chickpea flour
  • 3 cups of water
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of mustard seeds
  • ½ teaspoon of turmeric powder
  • ½ teaspoon of red chili powder
  • 1 tablespoon of oil
  • Salt to taste

Method for Kadhi

  • In a bowl, whisk together the yogurt, chickpea flour, and water until smooth.
  • Heat oil in a pan and add cumin seeds and mustard seeds. Wait for them to splutter.
  • Add turmeric powder and red chili powder and stir.
  • Add the yogurt mixture and salt to the pan.
  • Stir continuously for 10-12 minutes until the mixture thickens.
  • Turn off the heat and keep it aside.

Ingredients for Kachori

  • 2 cups of all-purpose flour
  • ¼ cup of semolina
  • ¼ cup of ghee
  • ½ teaspoon of baking powder
  • ½ teaspoon of cumin seeds
  • ½ teaspoon of salt
  • Oil for frying

Ingredients for Filling

  • 1 cup of boiled and mashed potatoes
  • ½ cup of boiled and mashed green gram lentils
  • ¼ cup of chopped onions
  • ½ teaspoon of red chili powder
  • ½ teaspoon of cumin powder
  • Salt to taste

Method for Kachori

  • In a bowl, mix together the flour, semolina, ghee, baking powder, cumin seeds, and salt.
  • Add water gradually and knead the mixture until it forms a smooth dough.
  • Cover the dough and let it rest for 15-20 minutes.
  • In a separate bowl, mix together the mashed potatoes, green gram lentils, onions, red chili powder, cumin powder, and salt to make the filling.
  • Divide the dough into small balls and roll them out into small circles.
  • Place a spoonful of the filling in the center of each circle. 
  • Fold the edges over the filling to form a ball and seal it. 
  • Heat oil in a pan and fry the kachoris until golden brown.
