I'm often asked to create "different" recipes for parties. This corn salad, cooked up for a barbecue, was an instant hit. Filled with multicolored vegetables and plenty of seasonings, it has great eye appeal and loads of flavor.
Ingredients for Quick Corn and Black Bean Salad Recipe
0.17 can Whole kernel corn, drained
0.17 can Black beans, rinsed and drained
0.17 Medium sweet red pepper, chopped
0.17 Medium tomato, seeded and chopped
1 Green onions, chopped
0.08 cup Chopped Red Onion
0.17 Jalapeno pepper, seeded and finely chopped, optional
0.17 Garlic clove, minced
0.13 cup Italian Salad Dressing
0.17 tablespoon Minced fresh cilantro
0.17 tablespoon Lime or lemon juice
0.13 teaspoon Hot pepper sauce
0.08 teaspoon Chili powder
